Pancetta is an Italian style of cured pork and gets its name from the Italian word for belly, ‘pancia’, which refers to the cut of pork used. Each region in Italy has its own way of making pancetta, but it generally involves trimming, salting and seasoning a piece of pork belly, then leaving it to air-dry for two to three months. It’s a great substitute for streaky bacon and is traditionally used to flavour Italian sauces and pasta dishes (it’s a must for authentic carbonara). Chopped pancetta is also great in stuffings and crisp-fried slices are delicious crumbled over salads and in pasta dishes.
