They are smaller CACCIATORI, approximately 60mm long, with coarse minced pork meat. Sweet peppers are added to the meat mixture as well as selected spices to give them their distinctive flavour. They are available in both mild, tied with white string, and hot which contains chilli is tied with red string. The coarse meat mixture is filled into natural casings, hand tied and aged for a minimum of 4 weeks and then vacuum packed. hot mini cacciatori contain a medium heat strength chilli.
